Ingredients
Instructions
  1. Fry your onion with 3 tablespoons of your favorite oil until soft and almost brown.
  2. Add your washed chunks of pumpkins, add salt, black pepper, and ginger and let it simmer for about 4 minutes.
  3. Add your chicken stock or water.
  4. Cover and let cook for at least 20-30 minutes or until your pumpkins are ready.
  5. Add all the cooked content to a blender and add the milk
  6. If your blender in small you can Puree the soup in small batches (1 cup at a time) using a food processor or blender.
  7. When it well-blended return to pan, and bring to a boil again.
  8. Pour into soup bowls and garnish with fresh parsley.
