This is a very simple recipe for sweet pumpkin soup that can be served with Mashed Potatoes or any of your Favorite dish. It can also be used as an appetizer.

Ingredients
- 1 cups chicken stock or water
- 1 1/2 teaspoons salt
- 1/2 kg chunks of pumpkins pilled
- 1 teaspoon chopped fresh parsley
- 1 cup chopped onion
- 1/2 teaspoon black pepper
- 1 teaspoon ginger powder
- 4 cup Milk
- 3 tablespoon Cooking oil

Instructions
- Fry your onion with 3 tablespoons of your favorite oil until soft and almost brown.
- Add your washed chunks of pumpkins, add salt, black pepper, and ginger and let it simmer for about 4 minutes.
- Add your chicken stock or water.
- Cover and let cook for at least 20-30 minutes or until your pumpkins are ready.
- Add all the cooked content to a blender and add the milk
- If your blender in small you can Puree the soup in small batches (1 cup at a time) using a food processor or blender.
- When it well-blended return to pan, and bring to a boil again.
- Pour into soup bowls and garnish with fresh parsley.
