Warm your oil in a large source pan and add your chopped onions, fry the onion until brown and tender.
Add the chopped mushrooms, chopped garlic, ground black pepper, thyme, and salt to the onions. Mix well and cover for about 3 minutes.
Pour in the Chicken or Vegetable broth to the above mix and cook for about 10-15 minutes or until the mushrooms are tender.
In blender or food processor, puree the mixture, leaving some chunks of mushrooms. Set aside (we will use it later to garnish your soup.
In a saucepan, melt the butter, whisk in the flour until smooth add the cream, or milk and already blended mushroom puree. Stirring constantly, bring soup to a boil and cook until thickened. Adjust seasonings to taste.
Serve in the soup bowl and add the chunks left aside to garnish your soup. Enjoy
