Ingredients
- 5 cups sliced fresh mushrooms
- 1 1/2 cups chicken broth
- 1/2 cup chopped onion
- 1/8 teaspoon dried thyme
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup half-and-half or Milk cream
- 3 cloves garlic minced (3 teaspoons)
- 4 tablespoons oil Use your favorite

Instructions
- Warm your oil in a large source pan and add your chopped onions, fry the onion until brown and tender.
- Add the chopped mushrooms, chopped garlic, ground black pepper, thyme, and salt to the onions. Mix well and cover for about 3 minutes.
- Pour in the Chicken or Vegetable broth to the above mix and cook for about 10-15 minutes or until the mushrooms are tender.
- In blender or food processor, puree the mixture, leaving some chunks of mushrooms. Set aside (we will use it later to garnish your soup.
- In a saucepan, melt the butter, whisk in the flour until smooth add the cream, or milk and already blended mushroom puree. Stirring constantly, bring soup to a boil and cook until thickened. Adjust seasonings to taste.
- Serve in the soup bowl and add the chunks left aside to garnish your soup. Enjoy
