This is a very simple recipe for sweet pumpkin soup that can be served with Mashed Potatoes or any of your Favorite dish. It can also be used as an appetizer.
Fry your onion with 3 tablespoons of your favorite oil until soft and almost brown.
Add your washed chunks of pumpkins, add salt, black pepper, and ginger and let it simmer for about 4 minutes.
Add your chicken stock or water.
Cover and let cook for at least 20-30 minutes or until your pumpkins are ready.
Add all the cooked content to a blender and add the milk
If your blender in small you can Puree the soup in small batches (1 cup at a time) using a food processor or blender.
When it well-blended return to pan, and bring to a boil again.
Pour into soup bowls and garnish with fresh parsley.
